Step #2 Lightly grease a large nonstick baking sheet with the butter.
Step #3 Press the brown sugar through a strainer onto a medium plate to remove any lumps & then sprinkle 2 tbsps of the sugar evenly over the prepared baking sheet.
Step #4 In a shallow bowl, applesauce, cardamom, rum, granulated sugar, vanilla, whisk the milk with the eggs, & salt.
Step #5 Add the bread slices & turn to coat, until thoroughly moistened.
Step #6 Arrange the slices on the prepared baking sheet & sprinkle evenly with the remaining 2 tbsps brown sugar.
Step #7 Bake for about 20 mins, turning once, until the toast is lightly browned & the sugar is caramelized.
Step #8 Transfer the French toast to warm individual plates & serve this with the blueberry & mango compote & the turkey sausage patties.
Step #9 Notes: Use a good-quality dense white bread that won't fall apart when soaked.
Step #10 Bake the French toast for a couple of mins longer if you like it extra-crisp.
