Caramelized Apple French Toast Recipe

Ingredients
  • 1/4 c plus 2 tbsps unsweetened applesauce
  • 2 tbsps dark rum
  • 1/4 c granulated sugar
  • 1 tsp pure vanilla extract
  • 1 tsp ground cardamom
  • 2 large eggs
  •  Pinch of salt
  •  Eight 1/2-inch-thick slices white bread
  • 1 tsp unsalted butter
  • 1 c low-fat (1%) milk
  • 1/4 c dark brown sugar

Directions
  • Step #1 Preheat the oven to 375°.
  • Step #2 Lightly grease a large nonstick baking sheet with the butter.
  • Step #3 Press the brown sugar through a strainer onto a medium plate to remove any lumps & then sprinkle 2 tbsps of the sugar evenly over the prepared baking sheet.
  • Step #4 In a shallow bowl, applesauce, cardamom, rum, granulated sugar, vanilla, whisk the milk with the eggs, & salt.
  • Step #5 Add the bread slices & turn to coat, until thoroughly moistened.
  • Step #6 Arrange the slices on the prepared baking sheet & sprinkle evenly with the remaining 2 tbsps brown sugar.
  • Step #7 Bake for about 20 mins, turning once, until the toast is lightly browned & the sugar is caramelized.
  • Step #8 Transfer the French toast to warm individual plates & serve this with the blueberry & mango compote & the turkey sausage patties.
  • Step #9 Notes: Use a good-quality dense white bread that won't fall apart when soaked.
  • Step #10 Bake the French toast for a couple of mins longer if you like it extra-crisp.
