Ingredients
1/2 c raisins
1 large egg yolk
1 large egg
Filling & custard:
About 2 tsps butter or margarine
Cranberry sauce
Crêpes:
1 c half-and-half (light cream) or milk
Sour cream (optional)
1 tsp finely shredded lemon peel
2/3 c all-purpose flour
1 carton (15 oz., 1 3/4 c) part-skim ricotta cheese
1 large egg
About 1/2 c sugar
11/ 4 c milk
Directions
Step #1 To make crêpes, whirl 11/ 4 c milk, 1 egg, & flour in a mixer until smooth.
Step #2 Place over med-heat/flame a nonstick frying pan that measures 7 to 8 inches across bottom.
Step #3 When hot, add 1/ 4 tsp butter & swirl to coat pan.
Step #4 Pour in 1/ 4 c batter, quickly tilting pan so batter flows over entire flat surface.
Step #5 Cook until crêpe is dry on top & edge is browned, about 30 seconds.
Step #6 Turn crêpe with a spatula & brown other side, about 15 seconds.
Step #7 Invert from pan onto a plate.
Step #8 Repeat, stacking crêpes as made.
Step #9 You need 8 crêpes; reserve any extras for another use.
Step #10 To make filling, soak raisins in hot water for 2 to 3 mins.
Step #11 Beat ricotta, 1/4 c sugar, & egg yolk until well mixed.
Step #12 Drain raisins & stir in theto ricotta mixture.
Step #13 Spoon 1/ 8 of the filling (about 1/4 c) across lower third of each crêpe, & roll to enclose.
Step #14 Place filled crêpes, seam side down, in a lightly buttered shallow 9- by 13-inch baking dish or shallow casserole.
Step #15 To make custard, whisk 1/4 c sugar & 1 egg with half-and-half.
Step #16 Pour evenly over filled crêpes.
Step #17 Bake in a 375° oven until custard at casserole edge no longer jiggles when carefully shaken, about 20 mins.
Step #18 Sprinkle top casserole with about 1 tsp sugar & shredded lemon peel.
Step #19 Lift out crêpes with a wide spatula.
Step #20 Serve warm with cranberry sauce & sour cream added to taste.
Step #21 Nutritional analysis per serving without cranberry sauce.
