Veggie Bread Bowl Recipe

Ingredients
  •  Butter-flavored cooking spray
  • 1/2 tsp freshly ground pepper
  • 2 c egg substitute
  • 1/2 medium-size red bell pepper, sliced
  • 4 poppy seed crusty rolls (about 1.7 oz each)
  • 1 small sweet onion, sliced
  • 1/2 c (2 oz) crumbled reduced-fat feta cheese
  • 1/2 c sliced fresh mushrooms
  • 1 to 2 tsps minced fresh dill (optional)
  • 3 oz fat-free cream cheese, sliced
  • 1 small zucchini, sliced

Directions
  • Step #1 Cut off tops of rolls, reserving tops.
  • Step #2 Hollow out rolls, leaving a 1/4-inch shell in each.
  • Step #3 Sauté onion & next 4 ingredients In a large-ish skillet coated with cooking spray over medium-high heat 5 to 7 mins or until tender.
  • Step #4 Remove from pan; set aside.
  • Step #5 Heat skillet coated with cooking spray over med-heat/flame; add egg substitute & cream cheese.
  • Step #6 Cook, without stirring, until eggs begin to set on bottom.
  • Step #7 Draw a spatula across bottom of skillet to form large curds.
  • Step #8 Continue cooking until eggs are thickened & moist (do not stir constantly).
  • Step #9 Remove from heat.
  • Step #10 Spoon evenly into rolls.
  • Step #11 Top evenly with onion mixture & feta cheese.
  • Step #12 Sprinkle top with dill, if desired.
  • Step #13 Replace tops of rolls.
  • Step #14 Serve with sliced cantaloupe, if desired.
