1 c (1-inch) cubed peeled Yukon gold or red potato
1 1/2 c all-purpose flour
2 tbsps chilled butter or stick margarine, cut into small pieces
1 tbsp cold water
3/4 c (3 oz) shredded reduced-fat sharp cheddar cheese
1/4 c minced green onions
Directions
Step #1 Preheat oven to 425°.
Step #2 Cook the potato in boiling water 15 mins or until very tender.
Step #3 Drain well; mash potato, & cool.
Step #4 Lightly spoon flour into dry measuring c; level with a knife.
Step #5 Combine flour, baking powder, baking soda, & salt in a bowl; cut in butter with a pastry mixer or 2 knives until the mixture resembles coarse meal.
Step #6 Add mashed potato, cheese, buttermilk, & green onions; stir just until moist.
Step #7 Turn dough out onto a floured surface, & knead lightly 5 times.
Step #8 Roll dough to a 3/4-inch thickness, & cut with a 3-inch biscuit cutter.
Step #9 Place on a baking sheet.
Step #10 Combine water & egg white, & brush over biscuits.
Step #11 Bake at 425° for 20 mins or until golden.
