Grilled Garlic-and-herb Grits Recipe

Ingredients
  • 4 c water
  • 2 garlic cloves, minced
  • 1 tsp hot sauce
  • 1/2 tsp salt
  •  Cooking spray
  • 2 c uncooked quick-cooking grits
  • 1/2 c (2 oz) grated fresh Parmesan cheese
  • 1/2 tsp freshly ground black pepper
  • 3 tbsps sliced fresh parsley
  • 1 (16-oz) can fat-free, less-sodium chicken broth

Directions
  • Step #1 Bring first 6 ingredients to a boil in a medium saucepan; slowly add grits, stirring constantly.
  • Step #2 Reduce heat to low; cover & cook 5 mins or until thick, stirring every once in awhile.
  • Step #3 Remove from heat; stir in the cheese & parsley.
  • Step #4 Spoon grits into a 13 x 9-inch baking dish coated with cooking spray, spreading evenly.
  • Step #5 Press plastic wrap onto surface of grits, & chill 4 hrs.
  • Step #6 Remove plastic wrap.
  • Step #7 Invert grits onto a cutting board; cut into 8 (3-inch) squares.
  • Step #8 Cut each square diagonally in half into 2 triangles.
  • Step #9 Prepare grill.
  • Step #10 Place triangles on a grill rack coated with cooking spray; grill 6 mins on each side or until lightly browned & thoroughly heated.
