Oatmeal Dinner Rolls Recipe

Ingredients
  • 2 c water
  • 1 1/2 tsps salt
  • 1/3 c firmly packed brown sugar
  • 2 (1/4-oz) envelopes active dry yeast
  • 1/2 c warm water (100° to 110°)
  • 1 c quick-cooking oats
  • 1 tbsp sugar
  • 3 tbsps butter or margarine
  • 4 c all-purpose flour

Directions
  • Step #1 Bring 2 c water to a boil in a medium saucepan; stir in the oats & butter.
  • Step #2 Boil, stirring constantly, 1 min.
  • Step #3 Remove from heat; let cool to 110°.
  • Step #4 Stir together yeast, 1/2 c warm water, & 1 tbsp sugar in a 2-c measuring c; let this stand 5 mins.
  • Step #5 Beat oat mixture, salt, yeast mixture, flour, & brown sugar at medium speed with an electric mixer until smooth.
  • Step #6 Turn dough out onto a lightly floured surface; knead until smooth & elastic (about 5 mins).
  • Step #7 Place in a well-greased bowl, turning to grease top.
  • Step #8 Cover up & let rise in a warm place (85°), free from drafts, 1 hr or until dough is doubled in bulk.
  • Step #9 Punch dough down, & divide in half; shape each portion into 16 (1 1/2-inch) balls.
  • Step #10 Place evenly into 2 lightly greased 9- x 1 3/4-inch round cakepans.
  • Step #11 Cover up & let rise in a warm place (85°), free from drafts, 30 mins or until doubled in bulk.
  • Step #12 Bake at 375° for 15 mins or until golden brown.
  • Step #13 Note: Reserve 1 portion of dough for Cinnamon Rolls recipe, if desired.
