Classic Scones Recipe

Ingredients
  • 1/3 c dried currants
  • 1/2 tsp salt
  • 3 tbsps granulated sugar
  • 2 tsps turbinado or granulated sugar
  • 2 tsps fat-free milk
  • 1 large egg white
  • 1 1/2 tsps baking powder
  • 2 c all-purpose flour (about 9 oz)
  • 1/4 tsp vanilla extract
  • 5 tbsps chilled butter, cut into small pieces
  • 1/2 c fat-free milk

Directions
  • Step #1 Preheat oven to 425°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour, baking powder, 3 tbsps granulated sugar, & salt in a bowl; stir with a whisk.
  • Step #4 Cut in butter with a pastry mixer or 2 knives until mixture resembles coarse meal.
  • Step #5 Combine 1/2 c milk, vanilla, & egg white in a bowl.
  • Step #6 Add milk mixture to flour mixture, stirring just until moist (dough will be soft).
  • Step #7 Turn dough out onto a lightly floured surface.
  • Step #8 Sprinkle top surface of dough with dried currants.
  • Step #9 With floured hands, knead 4 times or just until the currants are incorporated.
  • Step #10 Pat dough into an 8-inch circle on a baking sheet lined with parchment paper.
  • Step #11 Cut dough into 12 wedges, but not through, cutting into, dough.
  • Step #12 Brush 2 tsps milk over surface of dough; sprinkle with 2 tsps turbinado sugar.
  • Step #13 Bake at 425° for 17 mins or until golden.
  • Step #14 Serve warm, or cool on a wire rack.
