Bueno Breakfast Burrito Recipe

Ingredients
  • 1 tbsp tub-style fat-free cream cheese
  • 1 large egg
  • 1 (8-inch) fat-free flour tortilla
  • 2 tbsps bottled salsa
  • 1 tbsp finely sliced red bell pepper
  • 2 tbsps thinly sliced green onions
  • 2 tsps sliced fresh cilantro
  •  Dash of salt
  •  Cooking spray
  • 1 large egg white
  •  Dash of black pepper

Directions
  • Step #1 Combine first 7 ingredients.
  • Step #2 Place a small nonstick skillet coated with cooking spray over medium-high heat until hot.
  • Step #3 Add egg mixture, & cook, without stirring, until egg mixture begins to set on bottom.
  • Step #4 Draw a spatula across bottom of pan to form large curds.
  • Step #5 Continue cooking until egg mixture is thick but still moist; do not stir constantly.
  • Step #6 Place the tortilla on a microwave-safe plate.
  • Step #7 Spread cream cheese over tortilla, & microwave at high 15 seconds.
  • Step #8 Top with egg mixture & salsa, & roll up.
