Sweet Potato Biscuits Recipe

Ingredients
  • 1/2 c butter or margarine, softened
  •  Melted butter
  • 1 (1/4-oz) envelope active dry yeast
  • 1 tsp baking powder
  • 1/2 c sugar
  • 1 tsp salt
  • 1/4 c warm water (100° to 110°)
  • 1 (15-oz) can sweet potatoes in syrup, drained & mashed
  • 2 1/2 c all-purpose flour

Directions
  • Step #1 Combine yeast & 1/4 c warm water in a glass measuring c; let this stand 5 mins.
  • Step #2 Stir together sweet potatoes & butter, mixing well.
  • Step #3 Stir in sugar & salt; add yeast mixture, stirring until smooth.
  • Step #4 Combine flour & baking powder; slowly stir in theto potato mixture, until well mixed.
  • Step #5 Lightly knead until dough holds together.
  • Step #6 Shape dough into a ball; place this in a buttered mixing bowl.
  • Step #7 Brush top this with melted butter.
  • Step #8 Cover up & let rise in a warm place (85°), free from drafts, 2 1/2 hrs or until doubled in bulk.
  • Step #9 Punch down dough, & turn out onto a floured surface.
  • Step #10 Roll dough to a 1/2-inch thickness; cut with a 2-inch round cutter, & place on greased baking sheets.
  • Step #11 Cover up & let rise in a warm place, free from drafts, 2 hrs or until doubled in bulk.
  • Step #12 Bake at 400° for 12 mins or until golden.
