Chocolate Banana Bread Recipe

Ingredients
  •  About 1 1/2 c all-purpose flour
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 2 large eggs, at about room temp
  •  About 1/2 c (1/4 lb.) butter or margarine, at about room temp
  • 1 c sliced pecans (optional)
  • 1 1/2 c mashed ripe bananas
  • 1 c sugar
  • 1/3 c Dutch-process unsweetened cocoa

Directions
  • Step #1 Butter & flour a 9- by 5-inch loaf pan (8-c capacity).
  • Step #2 In a bowl, with a mixer on high speed, beat 1/2 c butter & the sugar until fluffy, about 3 mins, scraping bowl every once in awhile.
  • Step #3 Add eggs & beat until well mixed.
  • Step #4 Stir in bananas.
  • Step #5 In a small bowl, baking powder, mix 1 1/2 c flour, cocoa, & salt; add to banana mixture & mix just until evenly moistened.
  • Step #6 Stir in pecans if using.
  • Step #7 Pour batter into prepared pan.
  • Step #8 Bake in a 350° regular or convection oven until a thin wood skewer inserted in center of loaf comes out clean, 45 to 55 mins.
  • Step #9 Cool in pan on a rack for 10 mins, then invert loaf from pan & cool completely on rack, about 1 hr.
