Cranberry Biscuits With Smoked Turkey Recipe

Ingredients
  • 1 tsp baking powder
  • 2 tbsps warm water (105° to 115°)
  • 1 lb thinly sliced smoked turkey breast
  • 1 package dry yeast
  •  Vegetable cooking spray
  • 2 c bread flour
  • 2 tbsps vegetable shortening
  • 2/3 c warm nonfat buttermilk (105° to 115°)
  •  Spicy Mustard (optional)
  • 1/4 tsp salt
  • 1/2 c dried cranberries
  • 3 tbsps sugar

Directions
  • Step #1 Combine first 3 ingredients in food processor/blender, & pulse 2 times or until mixed.
  • Step #2 Add shortening, & process for 10 seconds or until mixed.
  • Step #3 Dissolve sugar & yeast in warm buttermilk & water in a small bowl; let this stand 5 mins.
  • Step #4 With processor on, slowly add yeast mixture through food chute; process until dough leaves sides of bowl & forms a ball.
  • Step #5 Turn dough out onto a lightly floured surface, & knead in cranberries.
  • Step #6 Roll dough to 1/2-inch thickness; cut with a 2-inch biscuit cutter into 20 biscuits.
  • Step #7 Place on a baking sheet coated with cooking spray.
  • Step #8 Let rise, uncovered, in a warm place (85°), free from drafts, 20 mins or until puffy.
  • Step #9 Bake at 425° for 8 mins or until golden.
  • Step #10 Split biscuits, & fill each with 3/4 oz turkey.
  • Step #11 Serve with Spicy Mustard, if desired.
