Ingredients
1 (8-oz) package shredded colby-Monterey Jack cheese mix
1 (15-oz) package put in the fridged piecrusts
1/4 tsp freshly ground pepper
1/4 tsp salt
2 tbsps Dijon mustard
1 1/2 c half-and-half
1 large sweet onion, sliced
1 tbsp butter or margarine
2 large eggs
1 1/2 lbs fresh asparagus
Directions
Step #1 Snap off tough ends of asparagus (trimmed to about 5 inches).
Step #2 Cook in boiling water to cover 30 seconds; drain.
Step #3 Plunge asparagus into ice water to stop the cooking process; drain.
Step #4 Reserve 9 spears; set aside.
Step #5 Coarsely chop remaining asparagus; set aside.
Step #6 Unfold piecrusts; stack on a lightly floured surface, & roll this into a 14-inch circle.
Step #7 Fit piecrust into an 11-inch tart pan, trimming excess dough.
Step #8 Line piecrust with foil wrap, & fill with pie weights or dried beans.
Step #9 Place tart pan on a baking sheet.
Step #10 Bake at 425° for 12 mins; remove weights & foil wrap.
Step #11 Bake 2 more mins.
Step #12 Cool on a wire rack.
Step #13 Melt butter in a skillet over medium-high heat.
Step #14 Add onion, & saute 5 mins or until tender.
Step #15 Set aside.
Step #16 Brush bottom & sides of crust with mustard.
Step #17 Sprinkle top with half of cheese, sliced asparagus, onion, & remaining cheese.
Step #18 Arrange reserved asparagus spears over cheese.
Step #19 Whisk together half-and-half & remaining ingredients.
Step #20 Pour mixture evenly over asparagus.
Step #21 Bake at 375° for 25 mins or until set & golden brown.
Step #22 Let stand 15 mins.
