Baked Grits Casserole Recipe

Ingredients
  • 1 tsp salt, divided
  • 1/2 tsp freshly ground black pepper
  • 2 c water
  • 4 c 1% low-fat milk
  •  Cooking spray
  • 6 tbsps finely sliced fresh chives
  • 2 tsps butter, melted
  • 1 c (4 oz) shredded Parmesan cheese
  • 5 large egg whites
  • 1 1/4 c uncooked quick-cooking grits

Directions
  • Step #1 Preheat oven to 350º.
  • Step #2 Combine milk, 2 c water, & 1/2 tsp salt in a medium saucepan over medium-high heat; bring to a boil.
  • Step #3 Add grits, stirring with a whisk.
  • Step #4 Cover up, reduce heat, & cook 8 mins or until liquid is absorbed.
  • Step #5 Remove from heat; stir in the 1/4 tsp salt, cheese, & pepper.
  • Step #6 Cool 5 mins.
  • Step #7 Place remaining 1/4 tsp salt & egg whites In a large-ish bowl.
  • Step #8 Beat egg whites with a mixer at high speed until stiff peaks form (do not overbeat).
  • Step #9 Gently fold grits mixture & chives into egg whites; spoon mixture into a 13 x 9-inch baking dish coated with cooking spray.
  • Step #10 Brush evenly with butter.
  • Step #11 Bake at 350° for 40 mins or until browned.
  • Step #12 Let stand 10 mins before serving.
