Step #1 In a bowl, mix oats & buttermilk; let this stand at least 15 mins or up to 30 mins.
Step #2 Meanwhile, mix flour, in a small bowl, baking soda, baking powder, sugar, & salt.
Step #3 In a large bowl, beat eggs, milk, & vanilla to mix.
Step #4 Stir in flour & oat mixtures just until evenly moistened, then carefully stir in the raspberries.
Step #5 Place a nonstick griddle or a 12-inch nonstick frying pan over med-heat/flame (350°); when hot, coat lightly with oil & adjust heat to maintain temperature.
Step #6 Pour batter in 1/2-c portions onto griddle & cook this until pancakes are browned on the bottom & edges begin to look dry, about 2 mins; turn with a wide spatula & brown other sides, 1 1/2 to 2 mins longer.
Step #7 Coat pan with more oil as necessary to cook remaining pancakes.
Step #8 Serve the pancakes as cooked, or keep them warm in a single layer on baking sheets in a 200° oven for up to 15 mins.
