Vanilla Bean Pancakes Recipe

Ingredients
  • 1/4 tsp salt
  • 1 tbsp sugar
  •  Cooking spray
  • 1/2 tsp baking soda
  • 1 1/2 c low-fat buttermilk
  • 1 vanilla bean
  • 2 c all-purpose flour
  • 2 large eggs, lightly beaten

Directions
  • Step #1 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #2 Combine flour, & salt, baking soda, sugar, stirring with a whisk; add the vanilla bean.
  • Step #3 Store in an airtight container for at least 2 days.
  • Step #4 Remove bean, & reserve for another use.
  • Step #5 Combine buttermilk & eggs In a large-ish bowl, stirring with a whisk.
  • Step #6 Add flour mixture to buttermilk mixture, stirring with a whisk until well mixd.
  • Step #7 Heat a nonstick griddle or large nonstick skillet coated with cooking spray over med-heat/flame.
  • Step #8 Spoon a scant 1/4 c batter per pancake onto griddle.
  • Step #9 Turn pancakes when tops are covered with bubbles & edges look cooked (about 3 mins).
