Whole-grain Apple Waffles Recipe

Ingredients
  • 1/4 tsp salt
  • 1 1/2 c whole-wheat flour
  • 1 tbsp baking powder
  • 2 tbsps sugar
  •  Maple syrup
  • 1/8 tsp ground nutmeg
  • 1 1/4 c goat's milk (or regular whole milk; see notes)
  • 2 large eggs, beaten to mix
  • 1 c applesauce
  • 2 tbsps salad oil

Directions
  • Step #1 In a bowl, baking powder, sugar, mix flour, salt, & nutmeg.
  • Step #2 In another bowl, milk, applesauce, mix eggs, & oil; add to dry ingredients & stir just until batter is evenly moistened.
  • Step #3 Turn a waffle iron to high heat & spray both sides with cooking oil spray.
  • Step #4 When it's hot, add about 1 1/4 c batter; close iron & cook this until waffle is well browned, about 9 mins.
  • Step #5 Remove waffle & serve, or keep warm in a single layer on a baking sheet in a 200° oven up to 15 mins.
  • Step #6 Repeat to cook remaining waffles.
  • Step #7 Serve with maple syrup.
