Goat Cheese-filled Cornbread Crêpes Recipe

Ingredients
  • 1 garlic clove, pressed
  • 4 sweet onions
  • 1 tsp freshly ground pepper
  •  Fresh Corn Sauce
  • 4 large red bell peppers
  •  Garnishes: reserved pepper strips & onion, fresh basil sprigs
  • 16 Cornbread Crêpes
  • 2 tbsps butter or margarine
  • 3 tbsps sliced fresh basil
  • 1 (12-oz) log fresh goat cheese, crumbled

Directions
  • Step #1 Place bell peppers on an aluminum foil wrap-lined baking sheet.
  • Step #2 Broil 5 inches from heat (with electric oven door partially open) 5 mins on each side or until peppers look blistered, turning once.
  • Step #3 Place peppers in a heavy-duty zip-top plastic bag; seal & let this stand 10 mins to loosen skins.
  • Step #4 Peel peppers; remove & discard seeds.
  • Step #5 Cut into thin strips.
  • Step #6 Reserve 1/2 c for garnish, if desired.
  • Step #7 Cut sweet onions into 1/4-inch-thick slices, & separate into rings.
  • Step #8 Melt butter In a large-ish heavy skillet over medium-high heat; add onion, & sauté 20 to 25 mins or until onion is a light caramel color.
  • Step #9 Reserve 1 c for garnish, if desired.
  • Step #10 Stir together garlic & next 3 ingredients.
  • Step #11 Spoon evenly onto Cornbread Crêpes; top this with remaining bell pepper & onion.
  • Step #12 Roll up, & place, seam side down, in a lightly greased 13- x 9-inch baking dish.
  • Step #13 Bake at 350° for 15 to 20 mins or until thoroughly heated.
  • Step #14 Serve with Fresh Corn Sauce, & garnish, if desired.
