Swiss Chard-and-bean Frittata Recipe

Ingredients
  • 4 sliced pitted kalamata olives
  • 1 (16-oz) can cannellini beans or other white beans, rinsed & drained
  • 1/4 tsp black pepper
  • 1 tbsp sliced fresh mint (optional)
  • 1/2 tsp salt
  • 1 tsp olive oil
  • 2 c torn Swiss chard or spinach
  • 1 tbsp finely sliced jalapeño pepper
  • 1 1/2 c sliced onion
  • 7 large egg whites, lightly beaten
  • 2 large eggs, lightly beaten

Directions
  • Step #1 Preheat broiler.
  • Step #2 Place egg whites, eggs, salt, & black pepper In a large-ish bowl, & stir well with a whisk.
  • Step #3 Stir in jalapeno, mint (if desired), olives, & beans.
  • Step #4 Heat the oil In a large-ish nonstick skillet over medium-high heat.
  • Step #5 Add Swiss chard & onion; saute 3 mins or until Swiss chard is tender.
  • Step #6 Pour the egg mixture into pan; reduce heat to medium-low, & cook 10 mins or until almost set.
  • Step #7 Wrap handle of skillet with foil wrap.
  • Step #8 Broil egg mixture for 4 mins or until golden brown.
