Chewy Gingersnaps Recipe

Ingredients
  • 1 c white sugar
  • 1/3 c molasses
  • 4 c all-purpose flour
  • 1 tsp ground ginger
  • 1/4 tsp salt
  • 2 tsps ground cinnamon
  • 1 c butter, softened
  • 1 egg
  • 1/2 tsp lemon extract
  • 1/2 tsp baking soda
  • 1 tsp ground cloves

Directions
  • Step #1 Cream the butter for 2 mins at medium speed.
  • Step #2 Add 2 1/2 c of the flour plus the sugar, egg, cinnamon, molasses, ginger, cloves, lemon extract, baking soda & salt.
  • Step #3 Mix well on medium-high speed.
  • Step #4 Stir in the remaining flour until mixed.
  • Step #5 Cover & put in the fridge dough for at least 2 hrs.
  • Step #6 Preheat oven to 350 degrees F (175 degrees C).
  • Step #7 Remove dough from refrigerator, & with a tsp, scoop out rounded measures of dough.
  • Step #8 Roll dough into balls & place 2 inches apart on ungreased cookie sheet.
  • Step #9 Flatten slightly with the bottom of a glass dipped in white sugar.
  • Step #10 Bake at 350 degrees F (175 degrees C) for 11 mins.
  • Step #11 Let stand for approximately for 30 seconds on cookie sheet before removing to cooling racks.
  • Step #12 Cool completely & store this in airtight containers.
