Step #1 Cream the butter for 2 mins at medium speed.
Step #2 Add 2 1/2 c of the flour plus the sugar, egg, cinnamon, molasses, ginger, cloves, lemon extract, baking soda & salt.
Step #3 Mix well on medium-high speed.
Step #4 Stir in the remaining flour until mixed.
Step #5 Cover & put in the fridge dough for at least 2 hrs.
Step #6 Preheat oven to 350 degrees F (175 degrees C).
Step #7 Remove dough from refrigerator, & with a tsp, scoop out rounded measures of dough.
Step #8 Roll dough into balls & place 2 inches apart on ungreased cookie sheet.
Step #9 Flatten slightly with the bottom of a glass dipped in white sugar.
Step #10 Bake at 350 degrees F (175 degrees C) for 11 mins.
Step #11 Let stand for approximately for 30 seconds on cookie sheet before removing to cooling racks.
Step #12 Cool completely & store this in airtight containers.
