Spinach, Ham, And Grits Soufflé Recipe

Ingredients
  • 3/4 c uncooked quick-cooking grits
  • 4 large egg whites (at about room temp)
  • 1 c (4 oz) shredded reduced-fat sharp cheddar cheese
  • 1 1/2 c skim milk
  •  Cooking spray
  • 1/4 tsp garlic powder
  • 1 (13 1/2-oz) can sliced spinach, drained & squeezed dry
  • 1 (10 1/2-oz) can low-salt chicken broth
  • 1/4 tsp pepper
  • 1/4 lb lean country ham, finely sliced

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Place a large saucepan coated with cooking spray over medium-high heat until hot.
  • Step #3 Add ham; sauté 2 mins or until lightly browned.
  • Step #4 Remove from pan; set aside.
  • Step #5 Combine milk & broth in pan; bring to a boil, stirring constantly.
  • Step #6 Stir in grits; reduce heat, & let simmer 7 mins or until thick, stirring frequently.
  • Step #7 Combine grits mixture, pepper, cheese, ham, garlic powder, & spinach In a large-ish bowl.
  • Step #8 Stir well; set aside.
  • Step #9 Beat egg whites at high speed of a mixer until stiff peaks form.
  • Step #10 Gently fold one-fourth of egg whites into grits mixture; carefully fold in remaining egg whites.
  • Step #11 Spoon mixture into a 2-quart casserole or soufflé dish coated with cooking spray.
  • Step #12 Bake at 375° for 40 mins or until set & lightly browned.
  • Step #13 Note: Substitute cured ham or cooked smoked pork chops for country ham, if desired.
