Banana-spice Muffins Recipe

Ingredients
  • 1 large egg white
  • 1 tbsp vanilla extract
  • 1 tbsp baking powder
  • 1/3 c light ricotta cheese
  • 1 tsp baking soda
  • 2/3 c 2% low-fat milk
  • 1/3 c low-fat buttermilk
  • 1/3 c packed brown sugar
  • 1/2 tsp salt
  • 1 tsp ground allspice
  • 1 large egg
  • 1 tsp ground ginger
  • 1/3 c granulated sugar
  •  Cooking spray
  • 1 c mashed ripe banana (about 2 small)
  • 2 1/2 c all-purpose flour
  • 2 tbsps vegetable oil

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Combine first 8 ingredients In a large-ish bowl, & make a well in center of mixture.
  • Step #3 Combine banana & next 7 ingredients (banana through egg) in a bowl, & add to flour mixture.
  • Step #4 Stir just until moist.
  • Step #5 Spoon batter into 18 muffin c coated with cooking spray.
  • Step #6 Bake at 400° for 18 mins or until done.
  • Step #7 Remove from pans as soon as possible, & cool on a wire rack.
