Apple Crisp French Toast Recipe

Ingredients
  •  About 2 tbsps butter or margarine
  • 2 tsps firmly packed brown sugar
  • 1/4 tsp vanilla
  •  About 1 tbsp lemon juice
  • 1/2 c vanilla-flavor nonfat yogurt
  • 1/4 tsp ground cinnamon
  • 2/3 c maple syrup
  • 1 c low-fat or nonfat milk
  • 1/2 c granola
  • 4 large eggs
  • 1 Granny Smith apple (about 1/2 lb.)
  • 1/2 c smooth peanut butter
  • 12 slices egg or white bread (about 1 lb. total)

Directions
  • Step #1 In a shallow pan such as a 8- or 9-inch pie pan, brown sugar, eggs, whisk to mix milk, cinnamon, & vanilla.
  • Step #2 Rinse apple, core, & cut into 1/8-inch-thick slices.
  • Step #3 In a small bowl, mix apple slices with lemon juice.
  • Step #4 In a 10- to 12-inch nonstick frying pan over medium-high heat, melt 1 tbsp butter.
  • Step #5 Dip 1 bread slice at a time in milk mixture, turn over, & transfer to frying pan without crowding.
  • Step #6 Cook each batch, turning to brown both sides, about 6 mins total.
  • Step #7 As done, set in a single layer on a 14- by 17-inch baking sheet & keep warm in a 200° oven.
  • Step #8 Add remaining butter to frying pan as needed to cook successive batches.
  • Step #9 Meanwhile, in a small bowl, mix 1/3 c maple syrup with yogurt.
  • Step #10 Also, in a 1-c glass measure, mix remaining 1/3 c maple syrup & peanut butter.
  • Step #11 Heat in a microwave oven at full power (100%) until warm, about 30 seconds, stirring once or twice.
  • Step #12 Place 2 slices of French toast on each plate.
  • Step #13 Drain apple slices & lay fruit equally onto toast; sprinkle with granola.
  • Step #14 Spoon maple-yogurt & peanut butter sauces equally onto portions.
