Savory Ham-and-swiss Breakfast Pie Recipe

Ingredients
  • 8 large eggs, divided
  • 1 2/3 c water
  • 2 garlic cloves, pressed
  • 1/2 lb cooked ham, sliced
  • 2/3 c uncooked quick-cooking grits
  • 1/4 tsp pepper
  • 1/2 c milk
  • 1 1/4 c (5 oz) shredded Swiss cheese, divided
  • 1 tsp salt
  • 1 c whipping cream
  • 2 tbsps butter
  • 4 green onions, sliced
  •  Garnish: chives

Directions
  • Step #1 Bring first 6 ingredients to a boil in a medium saucepan; slowly whisk in grits.
  • Step #2 Cover up, reduce heat, & let simmer, whisking every once in awhile, 5 to 7 mins.
  • Step #3 Add 1/2 c cheese, stirring until cheese melts.
  • Step #4 Remove from heat, & let this stand 10 mins.
  • Step #5 Lightly beat 2 eggs, & stir in theto grits mixture; pour this into a lightly greased 10-inch-deep pie plate.
  • Step #6 Bake at 350° for 20 mins; remove this from oven.
  • Step #7 Increase oven temperature to 400°.
  • Step #8 Sauté ham & onions in a nonstick skillet over medium-high heat 5 mins or until onion is tender.
  • Step #9 Layer ham mixture evenly over grits crust.
  • Step #10 Whisk together milk & remaining 6 eggs; pour over ham mixture.
  • Step #11 Sprinkle top remaining 3/4 c cheese evenly over egg mixture.
  • Step #12 Bake at 400° for 35 mins.
  • Step #13 Let stand 10 mins, & cut into wedges.
  • Step #14 Garnish, if desired.
