Corned Beef Potato Pancakes Recipe

Ingredients
  • salt & pepper to taste
  • 2 green onions, sliced
  • 1/4 c vegetable oil
  • 1 egg
  • 1/2 (12 oz) can corned beef, broken into very small chunks
  • 3 medium potatoes, shredded

Directions
  • Step #1 In a large bowl, green onions, mix the potatoes, corned beef, & egg.
  • Step #2 Spice up with salt & pepper.
  • Step #3 Form the mixture into golf ball sized balls.
  • Step #4 Heat the oil in a skillet over med-heat/flame.
  • Step #5 Place the potato balls a few at a time into the skillet, & fry 7 mins on each side, flatten with a spatula, until crisp & golden brown.
  • Step #6 Drain on paper towels.
  • Step #7 .
