Cream Cheese Scrambled Eggs Recipe

Ingredients
  • 1 tbsp butter
  • 1 (3-oz) package cream cheese, cut into cubes
  •  Garnish: fresh basil sprigs
  • 1/4 c milk
  • 1/3 c sliced fresh basil (optional)
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 8 large eggs

Directions
  • Step #1 Whisk together first 4 ingredients.
  • Step #2 Melt butter In a large-ish nonstick skillet over med-heat/flame; add egg mixture, without stirring, & cook, until eggs begin to set on bottom.
  • Step #3 Sprinkle top cream cheese cubes evenly over egg mixture; draw a spatula across bottom of skillet to form large curds.
  • Step #4 Cook until eggs are thickened but still moist.
  • Step #5 (Do not stir constantly.
  • Step #6 ) Remove from heat.
  • Step #7 Stir in sliced basil before serving, & garnish, if desired, if desired.
  • Step #8 Note: To lighten, substitute 2 c egg substitute for eggs & 3 oz light cream cheese for 3 oz regular cream cheese.
  • Step #9 Proceed as directed.
  • Step #10 Sausage-Egg Soft Tacos: Prepare Cream Cheese Scrambled Eggs as directed, substituting 1 seeded & sliced jalapeño pepper for sliced basil.
  • Step #11 Sprinkle top 6 (8-inch) flour tortillas evenly with 1 1/2 c shredded colby-Jack cheese.
  • Step #12 Top one half of each tortilla evenly with Cream Cheese Scrambled Eggs & 1 (16-oz) package cooked, drained, & crumbled ground pork sausage.
  • Step #13 Sprinkle top evenly with 1/2 c shredded colby-Jack cheese.
  • Step #14 Fold tortillas over filling.
  • Step #15 Serve with sour cream & salsa.
  • Step #16 Makes 6 servings.
