Veggie Frittata Recipe

Ingredients
  • 1 (6-oz.) bag fresh baby spinach*
  • 1/2 (8-oz.) block 2% reduced-fat sharp Cheddar cheese, shredded (about 1 c)
  • 1 medium-size yellow onion, sliced
  •  Garnishes: black pepper, sliced fresh parsley
  • 6 egg whites
  • 1/2 tsp pepper
  • 1/2 (8-oz.) container sliced fresh mushrooms
  • 1/4 c freshly grated Parmesan cheese
  • 2 tbsps fat-free milk
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 4 large eggs
  • 1/4 tsp ground nutmeg

Directions
  • Step #1 Sauté onion & mushrooms in hot oil in an ovenproof nonstick 10-inch skillet over medium-high heat 10 mins or until tender.
  • Step #2 Stir in spinach, & sauté 3 mins or until water evaporates & spinach wilts.
  • Step #3 Remove from heat, & set aside.
  • Step #4 Whisk together 4 large eggs, 6 egg whites, Cheddar cheese, & next 5 ingredients.
  • Step #5 Pour egg mixture into skillet with onion mixture, stirring to mix.
  • Step #6 Bake at 350° for 12 to 15 mins or just until set.
  • Step #7 Let stand 3 mins.
  • Step #8 Cut into wedges.
  • Step #9 Garnish, if desired.
  • Step #10 *1 (10-oz.
  • Step #11 ) package sliced frozen spinach, thawed & well drained, may be substituted for fresh spinach.
