Maple-cinnamon French Toast Recipe

Ingredients
  • 2 1/2 tbsps maple syrup
  •  Warm Wild Blueberry Sauce
  • 1 1/2 tsps vanilla extract
  •  Blueberries (optional)
  • 8 slices whole wheat bread
  • 4 large eggs
  • 1 1/2 c 2% reduced-fat milk
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 tsp butter or canola oil

Directions
  • Step #1 Preheat oven to lowest setting (about 200°).
  • Step #2 Place a large, shallow baking dish in oven to warm.
  • Step #3 Combine the eggs, milk, & salt In a large-ish bowl, maple syrup, vanilla extract, ground cinnamon, stirring with a whisk until the mixture is well mixed.
  • Step #4 Place 2 slices whole wheat bread in batter, & soak for 2 mins.
  • Step #5 Heat a large nonstick or cast-iron skillet over med-heat/flame.
  • Step #6 Melt butter or heat oil in skillet, swirling pan to spread it around.
  • Step #7 Lift bread slices out of batter, letting them drain slightly, & place bread in skillet.
  • Step #8 Cook until golden, flipping once (about 2-3 mins on each side).
  • Step #9 Transfer toast to the warm baking dish in the oven.
  • Step #10 Repeat the procedure with remaining bread slices.
  • Step #11 Serve hot with warm blueberry sauce spooned on top.
  • Step #12 Garnish with extra blueberries, if desired.
