Step #1 Preheat oven to lowest setting (about 200°).
Step #2 Place a large, shallow baking dish in oven to warm.
Step #3 Combine the eggs, milk, & salt In a large-ish bowl, maple syrup, vanilla extract, ground cinnamon, stirring with a whisk until the mixture is well mixed.
Step #4 Place 2 slices whole wheat bread in batter, & soak for 2 mins.
Step #5 Heat a large nonstick or cast-iron skillet over med-heat/flame.
Step #6 Melt butter or heat oil in skillet, swirling pan to spread it around.
Step #7 Lift bread slices out of batter, letting them drain slightly, & place bread in skillet.
Step #8 Cook until golden, flipping once (about 2-3 mins on each side).
Step #9 Transfer toast to the warm baking dish in the oven.
Step #10 Repeat the procedure with remaining bread slices.
Step #11 Serve hot with warm blueberry sauce spooned on top.
Step #12 Garnish with extra blueberries, if desired.
