Buttermilk-pear Pancakes Recipe

Ingredients
  • 1/4 tsp baking soda
  • 3/4 tsp baking powder
  • 3/4 c finely sliced peeled ripe Bartlett or Anjou pear
  • 1/4 tsp salt
  • 1 large egg, lightly beaten
  • 1 1/4 c all-purpose flour
  • 2 tbsps maple syrup
  • 1/2 tsp ground cinnamon
  • 1 1/3 c low-fat buttermilk
  • 1 tbsp vegetable oil

Directions
  • Step #1 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #2 Combine flour & next 4 ingredients (flour through salt) In a large-ish bowl.
  • Step #3 Combine buttermilk, syrup, & egg; add to flour mixture, oil, stirring until smooth.
  • Step #4 Fold in pear.
  • Step #5 Spoon about 1/4 c batter onto a hot nonstick griddle or a large nonstick skillet.
  • Step #6 Turn pancakes when tops are covered with bubbles & edges look cooked.
