Crustless Broccoli And Cheese Quiche Recipe

Ingredients
  • 1 c (4 oz) shredded reduced-fat Swiss cheese
  • 1/8 tsp ground nutmeg
  • 5 c broccoli florets
  • 4 large egg whites, lightly beaten
  • 2 tbsps sliced fresh parsley
  • 6 (1-oz) slices whole wheat bread, toasted
  • 1/4 tsp freshly ground black pepper
  • 2 tsps olive oil
  •  Cooking spray
  • 1 garlic clove, minced
  • 1 1/4 c 1% low-fat milk
  • 1/2 tsp salt
  • 2 large eggs, lightly beaten
  • 1 tbsp grated fresh Parmesan cheese
  • 1/2 c vertically sliced onion
  • 2 tsps Dijon mustard

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Heat oil In a large-ish nonstick skillet over medium-high heat.
  • Step #3 Add onion & garlic; sauté 1 1/2 mins.
  • Step #4 Add broccoli; sauté 1 min.
  • Step #5 Spread broccoli mixture into a 9-inch pie plate coated with cooking spray.
  • Step #6 Combine milk & next 8 ingredients (milk through eggs) In a large-ish bowl.
  • Step #7 Pour milk mixture over broccoli mixture; sprinkle with Parmesan.
  • Step #8 Bake at 350° for 40 mins or until top is golden & a knife inserted in center comes out clean; let this stand 5 mins.
  • Step #9 Serve with toast.
