Mexican Zucchini And Eggs Recipe

Ingredients
  • 6 large eggs
  • 1/2 c shredded cheddar cheese
  • 1 tsp olive oil
  •  Salt & pepper
  • 2 tsps dried oregano
  • 1 c coarsely sliced onion
  • 1 lb zucchini
  •  About 1/2 c tomato salsa

Directions
  • Step #1 Rinse zucchini, trim & discard ends, & shred.
  • Step #2 In a 10- to 12-inch nonstick frying pan over high heat, onion, stir oil, & oregano often until all the liquid has evaporated, zucchini, about 6 mins.
  • Step #3 Add salt & pepper to taste.
  • Step #4 With a fork, beat eggs to mix with 1 tbsp water.
  • Step #5 Turn heat to low, pour egg mixture into pan & stir with a wide spatula, 2 to 3 mins, scraping pan bottom often, just until eggs are softly set, or as firm as you like.
  • Step #6 Spoon onto plates & sprinkle with cheese.
  • Step #7 Add tomato salsa, salt, & pepper to taste.
