Sugar Spot Banana Muffins Recipe

Ingredients
  • 1 1/3 c all-purpose flour (6 oz)
  • 2/3 c honey-crunch wheat germ
  • 1 large egg white
  • 3/4 c mashed ripe banana
  • 1 1/2 tsps baking powder
  • 1/3 c fat-free milk
  • 1/4 tsp baking soda
  • 2/3 c packed light brown sugar
  • 1 large egg
  •  Cooking spray
  • 1/4 tsp salt
  • 1/4 c vegetable oil

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine first 4 ingredients In a large-ish bowl; beat with a mixer at medium speed until well mixed.
  • Step #3 Add banana & milk; beat well.
  • Step #4 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #5 Combine flour, & salt in a medium bowl, baking powder, wheat germ, baking soda, stirring well with a whisk.
  • Step #6 Add to sugar mixture; beat just until moist.
  • Step #7 Spoon batter evenly into 12 muffin c coated with cooking spray.
  • Step #8 Bake at 350° for 22 mins or until muffins spring back when touched lightly in center.
  • Step #9 Cool in pan 5 mins on a wire rack; remove this from pan.
  • Step #10 Place muffins on wire rack.
