Whole Wheat Apricot Muffins Recipe

Ingredients
  • 2/3 c whole wheat flour
  • 1 tsp baking soda
  • 1 c finely sliced dried apricots
  • 1/2 tsp vanilla extract
  • 1/4 c butter, melted
  •  Cooking spray
  • 1/2 c sugar
  • 1/4 tsp salt
  • 1 c all-purpose flour
  • 1 1/4 tsps grated orange rind
  • 1 large egg
  • 1 c low-fat buttermilk

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Lightly spoon flours into dry measuring c; level with a knife.
  • Step #3 Combine flours, sugar, & salt In a large-ish bowl, orange rind, baking soda, stirring with a whisk; make a well in center of mixture.
  • Step #4 Combine buttermilk, & egg; add to flour mixture, vanilla, butter, stirring just until moist.
  • Step #5 Fold in apricots.
  • Step #6 Spoon batter into 12 muffin c coated with cooking spray.
  • Step #7 Bake at 375° for 15 mins or until muffins spring back when touched lightly in center.
  • Step #8 Remove muffins from pan, & place on a wire rack.
