Summer-berry Compote Recipe

Ingredients
  • 2 tbsps champagne or white wine vinegar
  • 1 1/2 c fresh raspberries
  • 1/2 tsp grated lemon rind
  • 2 peaches, each peeled & cut into 6 wedges
  • 2 tbsps fresh lemon juice
  • 1/2 c packed brown sugar
  • 1 1/2 c fresh blackberries
  • 2 c fresh blueberries

Directions
  • Step #1 Combine first 5 ingredients in a medium nonaluminum saucepan; bring to a boil.
  • Step #2 Cover up, reduce heat, & let simmer 20 mins.
  • Step #3 Cool to about room temp.
  • Step #4 Spoon about 1/4 c blueberry mixture into each of 6 shallow bowls, 1/4 c blackberries, & top each serving with 1/4 c raspberries, & 2 peach wedges.
