Power Granola Recipe

Ingredients
  • 2 tsps canola oil
  • 1/3 c dried cranberries
  • 1/4 c sliced walnuts
  • 2 c regular oats
  • 1/4 c sliced slivered almonds
  • 1/4 c packed brown sugar
  • 1/3 c honey
  • 1 tsp vanilla extract
  • 1/3 c ground flaxseed
  • 2 tsps ground cinnamon
  • 1/3 c orange juice
  •  Cooking spray

Directions
  • Step #1 Preheat oven to 300°.
  • Step #2 Combine first 5 ingredients in a medium bowl.
  • Step #3 Combine orange juice, honey, & brown sugar in a small saucepan.
  • Step #4 Cook over med-heat/flame just until sugar dissolves, stirring frequently.
  • Step #5 Remove from heat; stir in the oil & vanilla.
  • Step #6 Pour honey mixture over oat mixture, stirring to coat.
  • Step #7 Spread mixture in a thin layer onto a jelly-roll pan coated with cooking spray.
  • Step #8 Bake at 300° for 10 mins; stir well.
  • Step #9 Bake an extra 10 to 15 mins or until golden brown.
  • Step #10 Spoon granola into a bowl; stir in the dried cranberries.
  • Step #11 Cool completely.
  • Step #12 Note: Store completely cooled granola in an airtight container at about room temp for up to 2 weeks.
