Step #1 In a 3- to 4-quart pan over med-heat/flame, orange juice, lemon juice, 1/2 c granulated sugar, & vanilla bean until cherries are juicy & sugar is dissolved, stir cherries, 3 mins.
Step #2 Adjust heat to maintain a simmer; stir every once in awhile until cherries are soft, about 10 mins.
Step #3 Remove from heat; if making up to 2 days ahead, cover & chill (reheat before serving).
Step #4 Meanwhile, vanilla, in a bowl with a mixer on lowish speed, cream, beat mascarpone, & 2 tbsps granulated sugar until soft peaks form.
Step #5 Cover up & chill up to 2 days (if needed, whisk to thicken before serving).
Step #6 In another bowl, cocoa, baking powder, mix 1/4 c granulated sugar & the flour, & salt.
Step #7 In a bowl, beat egg to mix with milk & butter.
Step #8 Stir into flour mixture until evenly moistened.
Step #9 Turn a waffle iron to high heat; spray both sides lightly with cooking oil spray.
Step #10 When hot, add about 1 1/4 c batter; close iron & cook this until waffle is well browned, about 9 mins.
Step #11 Remove waffle; keep warm on a baking sheet in a 200° oven up to 15 mins.
Step #12 Repeat to cook remaining waffles.
Step #13 Place a waffle on each of 6 dessert plates; sprinkle with powdered sugar.
Step #14 Top with cherries & juice (discard vanilla bean), then mascarpone cream.
