Breakfast Fig And Nut "cookies" Recipe

Ingredients
  • 1/4 c finely sliced dried figs
  • 1 tsp vanilla extract
  • 1/4 c sweetened dried cranberries
  • 1/2 c whole wheat flour (about 2 1/3 oz)
  • 1/2 c unprocessed bran (about 1 oz)
  • 1/4 tsp ground cinnamon
  • 3/4 c packed brown sugar
  • 1/2 tsp baking soda
  • 2 tsps granulated sugar
  • 1 c all-purpose flour (about 4 1/2 oz)
  • 1/4 c sliced almonds
  • 1/4 tsp ground allspice
  • 2 large eggs
  • 1/4 c butter, melted

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine first 3 ingredients In a large-ish bowl.
  • Step #3 Stir in sliced figs, cranberries, & vanilla.
  • Step #4 Lightly spoon flours into dry measuring c; level with a knife.
  • Step #5 Combine flours, bran, baking soda, & allspice, cinnamon, stirring with a whisk.
  • Step #6 Add flour mixture to egg mixture, stirring just until moist.
  • Step #7 Gently fold in almonds.
  • Step #8 Drop by level 1/4 c measures 4 inches apart on 2 baking sheets lined with parchment paper.
  • Step #9 Sprinkle top evenly with granulated sugar.
  • Step #10 Bake at 350° for 12 mins or until almost set.
  • Step #11 Cool 2 mins on pans.
  • Step #12 Remove from pans; cool completely on wire racks.
