Banana-date Flaxseed Bread Recipe

Ingredients
  • 1/2 tsp baking soda
  • 1/2 c whole pitted dates, sliced
  • 1/2 tsp baking powder
  • 2 large eggs
  • 1/4 c flaxseeds
  • 2/3 c mashed ripe banana
  • 1/2 c flaxseeds
  • 1/4 c vegetable oil
  • 1 1/2 c all-purpose flour
  • 1/2 c sugar
  •  Cooking spray
  • 1/2 tsp salt

Directions
  • Step #1 Place 1/2 c flaxseeds in a mixer, & process until ground to measure 3/4 c flaxseed meal.
  • Step #2 Set flaxseed meal aside.
  • Step #3 Preheat oven to 350°.
  • Step #4 Beat the banana, oil, sugar, & eggs at medium speed of a mixer until well-mixed.
  • Step #5 Lightly spoon flour into dry measuring c, & level with a knife.
  • Step #6 Combine flour, baking powder, 1/4 c flaxseeds, flaxseed meal, baking soda, & slowly add to sugar mixture, & salt, beating until well-mixed.
  • Step #7 Stir in sliced dates.
  • Step #8 Spoon the batter into an 8 x 4-inch loaf pan coated with cooking spray.
  • Step #9 Bake bread at 350° for 55 mins or until a wooden pick inserted in center comes out clean.
  • Step #10 Cool 10 mins in pan on a wire rack, & remove this from pan.
  • Step #11 Cool completely on wire rack.
