Crabmeat-parmesan Quiche Recipe

Ingredients
  • 3 large eggs
  • 3 to 4 green onions, sliced
  • 1 tsp grated lemon rind
  • 2 (6-oz) cans lump crabmeat, rinsed & drained
  • 1/8 tsp ground red pepper
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1 (5-oz) package shredded Parmesan cheese
  • 1 c half-and-half
  • 1/2 tsp Old Bay seasoning
  • 2 tsps olive oil
  • 1/2 (15-oz) package put in the fridged piecrusts

Directions
  • Step #1 Unfold piecrust, & place on a lightly floured surface.
  • Step #2 Roll to 1/8-inch thickness.
  • Step #3 Carefully place piecrust in a 9-inch pieplate; fold edges under, & crimp.
  • Step #4 Bake on lowest oven rack at 400° for 8 mins.
  • Step #5 Cool.
  • Step #6 Sauté sliced green onions in hot oil In a large-ish skillet over medium-high heat 2 mins.
  • Step #7 Stir in crabmeat & next 3 ingredients; sauté 2 mins.
  • Step #8 Whisk together half-and-half & next 3 ingredients In a large-ish bowl; stir in the cheese & crabmeat mixture.
  • Step #9 Pour into prepared crust.
  • Step #10 Bake on lowest oven rack at 400° for 35 to 40 mins or until set.
  • Step #11 Let stand 15 mins.
