Parsley, Leek, And Green Onion Frittata Recipe

Ingredients
  • 4 large eggs
  • 1/2 c part-skim ricotta cheese
  • 2 tbsps fat-free milk
  • 2 tbsps (1/2 oz) grated fresh Parmesan cheese
  • 1/4 tsp salt
  • 1 tbsp olive oil
  • 2 large egg whites
  • 1/4 tsp ground red pepper
  • 1/2 c sliced fresh flat-leaf parsley
  • 1 c sliced leek
  • 1/2 c (1-inch) julienne-cut carrot
  • 1/2 c sliced green onions

Directions
  • Step #1 Combine the first 8 ingredients in a bowl, & stir with a whisk until mixed.
  • Step #2 Heat the olive oil In a large-ish nonstick skillet over med-heat/flame.
  • Step #3 Add sliced leek, carrot, & sliced green onions, & sauté for 5 mins or until tender.
  • Step #4 Add the egg mixture; cover & cook over low heat/flame for 8 mins or until the frittata is almost set.
