Morrison House Brioche Recipe

Ingredients
  • 2 tsps salt
  • 1/4 c warm water
  • 2 tbsps sugar
  • 8 large eggs
  • 1 1/4 c unsalted butter, chilled & cut into pieces
  • 4 1/3 c all-purpose flour
  • 1 large egg, lightly beaten
  • 1/2 (1/4-oz) envelope active dry yeast (1 1/2 tsps)

Directions
  • Step #1 Combine flour & sugar In a large-ish mixing bowl.
  • Step #2 Make a well in center of mixture; add yeast & water in center.
  • Step #3 Let stand 5 mins.
  • Step #4 Beat at lowish speed with an electric mixer until mixed; add salt & 8 eggs, one at a time, beating until mixed after each addition.
  • Step #5 Add butter slowly, beating well (small bits of butter will be visible).
  • Step #6 Cover up & put in the fridge 8 hrs or overnight (dough will be sticky).
  • Step #7 Divide dough into 12 portions; pinch off a 1-inch ball of dough from each portion, & set aside.
  • Step #8 Roll larger pieces into balls on a lightly floured surface; place this in well-greased individual brioche molds or a muffin pan.
  • Step #9 Place molds or muffin pan on a baking sheet.
  • Step #10 Make a well in center of each ball.
  • Step #11 Shape remaining dough pieces into balls, & place this in wells.
  • Step #12 Brush brioche with beaten egg; let this stand 30 mins.
  • Step #13 Bake at 350° for 30 mins.
  • Step #14 Cool in molds 10 mins; remove this from molds.
