Spinach-and-potato Frittata Recipe

Ingredients
  • 1/4 tsp freshly ground black pepper
  • 6 large egg whites
  • 1/2 c sliced onion
  •  Cooking spray
  • 1/4 c sliced Canadian bacon (about 2 slices)
  • 3 large eggs
  • 2 tbsps shredded reduced-fat sharp cheddar cheese
  • 1 (10-oz) package frozen sliced spinach, thawed, drained, & squeezed dry
  • 1/2 tsp salt
  • 1 1/2 c sliced peeled baking potato (about 6 oz)

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Cook the potato in boiling water 5 mins or until tender; drain.
  • Step #3 Combine egg whites & eggs In a large-ish bowl, stirring with a whisk.
  • Step #4 Stir in potato, salt, pepper, Canadian bacon, & spinach.
  • Step #5 Coat a 9-inch cast-iron skillet with cooking spray; place over medium-high heat.
  • Step #6 Add onion; sauté 4 mins or until tender.
  • Step #7 Add potato mixture to pan; cook over med-heat/flame 5 mins or until almost set.
  • Step #8 Sprinkle top with cheese.
  • Step #9 Bake at 400° for 6 mins or until set.
  • Step #10 Let stand 3 mins; cut into 4 wedges.
