Ingredients
  • 1 (6 1/2-lb) boneless pork shoulder roast
  • 2 tbsps ground black pepper
  • 1/3 c dried sage
  • 1/4 c salt
  • 2 tbsps brown sugar
  • 1/8 tsp ground red pepper

Directions
  • Step #1 Trim skin from pork roast, if necessary, & discard.
  • Step #2 Cut roast into chunks, & grind in a meat grinder.
  • Step #3 Stir in sage & remaining ingredients.
  • Step #4 Note: Pork shoulder roasts are often labeled Boston Butt.
  • Step #5 If you don't have a meat grinder, ask the butcher for assistance.
