Whole Wheat Buttermilk Pancakes Recipe

Ingredients
  • 3/4 c maple syrup
  • 1 tbsp vegetable oil
  • 1/2 tsp baking soda
  •  Cooking spray
  • 3/4 c whole wheat flour
  • 1 large egg white
  • 1 1/2 c low-fat buttermilk
  • 1 1/2 tsps baking powder
  • 3 tbsps sugar
  • 1/2 tsp salt
  • 1 large egg
  • 3/4 c all-purpose flour
  • 3 tbsps butter

Directions
  • Step #1 Lightly spoon flours into dry measuring c; level with a knife.
  • Step #2 Combine flours, baking powder, & salt In a large-ish bowl, sugar, baking soda, stirring with a whisk.
  • Step #3 Combine buttermilk, egg, oil, stirring with a whisk; add to flour mixture, & egg white, stirring just until moist.
  • Step #4 Heat a nonstick griddle or nonstick skillet coated with cooking spray over med-heat/flame.
  • Step #5 Spoon about 1/4 c batter per pancake onto griddle.
  • Step #6 Turn pancakes over when tops are covered with bubbles & edges look cooked.
  • Step #7 Serve with syrup & butter.
