Spanish Omelet With Fresh Avocado Salsa Recipe

Ingredients
  • 2 tsps butter or margarine, divided
  •  Garnishes: sour cream, freshly ground pepper
  •  Fresh Avocado Salsa
  • 1 garlic clove, minced
  • 1/4 tsp salt
  • 1 small sweet onion, sliced
  •  Vegetable cooking spray
  • 1/4 tsp pepper
  • 1 c sliced chorizo sausage (about 4 oz)*
  • 6 large eggs
  • 1/2 small green bell pepper, sliced
  • 1 (3-oz) package goat cheese, crumbled

Directions
  • Step #1 Cook chorizo sausage & next 3 ingredients in a small nonstick skillet over medium-high heat 10 mins or until vegetables are tender.
  • Step #2 Remove chorizo mixture from skillet, & set aside.
  • Step #3 Wipe skillet clean.
  • Step #4 Whisk together eggs, 1/4 tsp salt, & 1/4 tsp pepper.
  • Step #5 Melt 1 tsp butter in skillet coated with cooking spray over medium-high heat, rotating pan to coat bottom evenly.
  • Step #6 Add half of egg mixture.
  • Step #7 As egg mixture starts to cook, carefully lift edges of omelet with a spatula, & tilt pan so uncooked portion flows underneath.
  • Step #8 Flip omelet over.
  • Step #9 Sprinkle top 1 side of omelet with half each of chorizo mixture & goat cheese.
  • Step #10 Fold over omelet.
  • Step #11 To make next omelet, repeat with remaining 1 tsp butter, egg mixture, chorizo mixture, & cheese.
  • Step #12 Top with Fresh Avocado Salsa; garnish, if desired.
  • Step #13 * Spicy smoked sausage may be substituted for chorizo.
