Frittata With Peppers And Sweet Italian Sausage Recipe

Ingredients
  • 1/2 c grated Parmesan
  • 3/4 c milk
  • 1/2 c sliced fresh parsley
  • 1/4 tsp sliced fresh rosemary
  • 1 tbsp olive or vegetable oil
  •  1 green bell pepper, sliced into thin strips
  •  1 large sweet onion, sliced into 8 wedges
  •  1 red bell pepper, sliced into thin strips
  • 1/2 tsp freshly ground black pepper
  •  1 yellow bell pepper, sliced into thin strips
  •  6 eggs
  • 1/2 lb sweet Italian sausage (2 links)
  • 1/2 tsp salt

Directions
  • Step #1 Preheat oven to 450° F.
  • Step #2 Place a large skillet over medium-high heat.
  • Step #3 Remove the casings from the sausage & crumble the meat into the skillet.
  • Step #4 Sauté until cooked through, 6 to 8 mins.
  • Step #5 Remove the sausage from the skillet & set aside.
  • Step #6 Add the oil to the skillet.
  • Step #7 Add the peppers & onion & sauté until the vegetables have started to brown & soften, about 15 mins.
  • Step #8 While the peppers & onion cook, parsley, whisk the eggs together with the milk, Parmesan, pepper, salt, & rosemary.
  • Step #9 When the peppers & onion are done, turn off the heat & pour the egg mixture into the skillet.
  • Step #10 Sprinkle top the sausage over the top & cook over medium-low heat for 5 mins, or until almost set.
  • Step #11 Wrap the handle of the skillet with aluminum foil wrap if it is not metal, & place the skillet in oven for 5 to 7 mins or until the frittata is set.
  • Step #12 Let stand for 2 mins before serving.
  • Step #13 Cut into 6 wedges & serve hot.
