Simple Sweet Potato Biscuits Recipe

Ingredients
  • 1 c mashed sweet potato
  • 1/3 c light butter
  • 2 3/4 c reduced-fat all-purpose baking mix
  • 1/2 c 2% reduced-fat milk

Directions
  • Step #1 Cut butter into baking mix with a pastry mixer or 2 forks until mixture is crumbly.
  • Step #2 Whisk together sweet potato & milk; add to butter mixture, stirring with a fork just until dry ingredients are moistened.
  • Step #3 Turn dough out onto a lightly floured surface; knead carefully 4 or 5 times.
  • Step #4 (Dough will be moist.
  • Step #5 ) Pat or roll dough to 1/2-inch thickness; cut with a 2-inch round cutter.
  • Step #6 Place biscuits on lightly greased baking sheets.
  • Step #7 Bake at 450° for 10 mins or until golden brown.
