Creamy Shrimp Sauce Recipe

Ingredients
  • 1 c whipping cream
  • 1 small shallot, sliced
  • 1 (14.5-oz) can chicken broth
  • 2 tbsps sherry
  • 1 lb medium-size fresh shrimp
  • 1 1/2 tbsps flour
  • 2 1/2 tbsps butter, divided

Directions
  • Step #1 Peel shrimp, reserving shells; devein, if desired.
  • Step #2 Melt 1 tbsp butter in a 3 1/2-quart saucepan over med-heat/flame.
  • Step #3 Add shrimp, & cook 5 mins or just until shrimp turn pink.
  • Step #4 Chop shrimp, & set aside.
  • Step #5 Add shrimp shells, shallot, & chicken broth to saucepan; bring to a boil.
  • Step #6 Remove from heat, cover, & let this stand 30 mins.
  • Step #7 Pour broth mixture through a wire-mesh strainer into a bowl, discarding shells & shallot.
  • Step #8 Melt remaining 1 1/2 tbsps butter in saucepan over med-heat/flame.
  • Step #9 Whisk in flour.
  • Step #10 Cook, whisking constantly, 1 min.
  • Step #11 Gradually whisk in broth mixture.
  • Step #12 Bring to a boil; boil 1 min or until slightly thickened.
  • Step #13 Add cream; reduce heat to low.
  • Step #14 Add sliced shrimp & sherry; stir until thoroughly heated.
