Pecan-pie Muffins Recipe

Ingredients
  • 2 large eggs
  • 1/2 c butter or margarine, melted
  • 1 c sliced pecans
  • 1/2 c all-purpose flour
  • 1 c firmly packed brown sugar

Directions
  • Step #1 Combine first 3 ingredients In a large-ish bowl; make a well in center of mixture.
  • Step #2 Beat eggs until foamy.
  • Step #3 Stir together eggs & butter; add to dry ingredients, stirring just until moistened.
  • Step #4 Place foil wrap baking c in muffin pans, & coat with cooking spray; spoon batter into c, filling two-thirds full.
  • Step #5 Bake at 350° for 20 to 25 mins or until done.
  • Step #6 Remove from pans as soon as possible, & cool on wire racks.
