Pumpkin Muffins Recipe

Ingredients
  • 2 large eggs
  • 1/3 c canola oil
  • 1/4 c molasses
  •  Cooking spray
  • 2 tsps pumpkin pie spice
  • 1 c golden raisins
  • 1 tsp ground ginger
  • 2 tbsps granulated sugar
  • 1/4 tsp salt
  • 1 1/2 tsps baking soda
  • 1 tsp vanilla extract
  • 1/3 c buttermilk
  • 2 1/4 c all-purpose flour (about 10 oz)
  • 1 c canned pumpkin
  • 1 c packed brown sugar

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour, pumpkin pie spice, ginger, baking soda, & salt in a medium bowl, stirring well with a whisk.
  • Step #4 Stir in raisins; make a well in center of mixture.
  • Step #5 Combine brown sugar, buttermilk, canned pumpkin, canola oil, molasses, vanilla extract, & eggs, stirring well with a whisk.
  • Step #6 Add sugar mixture to flour mixture; stir just until moist.
  • Step #7 Spoon batter into 18 muffin c coated with cooking spray.
  • Step #8 Sprinkle top with granulated sugar.
  • Step #9 Bake at 400° for 15 mins or until a wooden pick inserted in center comes out clean.
  • Step #10 Remove muffins from pans as soon as possible; cool on a wire rack.
