Ingredients
2 large eggs
1/3 c canola oil
1/4 c molasses
Cooking spray
2 tsps pumpkin pie spice
1 c golden raisins
1 tsp ground ginger
2 tbsps granulated sugar
1/4 tsp salt
1 1/2 tsps baking soda
1 tsp vanilla extract
1/3 c buttermilk
2 1/4 c all-purpose flour (about 10 oz)
1 c canned pumpkin
1 c packed brown sugar
Directions
Step #1 Preheat oven to 400°.
Step #2 Lightly spoon flour into dry measuring c; level with a knife.
Step #3 Combine flour, pumpkin pie spice, ginger, baking soda, & salt in a medium bowl, stirring well with a whisk.
Step #4 Stir in raisins; make a well in center of mixture.
Step #5 Combine brown sugar, buttermilk, canned pumpkin, canola oil, molasses, vanilla extract, & eggs, stirring well with a whisk.
Step #6 Add sugar mixture to flour mixture; stir just until moist.
Step #7 Spoon batter into 18 muffin c coated with cooking spray.
Step #8 Sprinkle top with granulated sugar.
Step #9 Bake at 400° for 15 mins or until a wooden pick inserted in center comes out clean.
Step #10 Remove muffins from pans as soon as possible; cool on a wire rack.
