German Pancake Recipe

Ingredients
  • 3 large eggs
  • 1/4 tsp kosher salt
  • 2 tbsps confectioners' sugar
  • 1/2 c milk, preferably whole
  • 2 tbsps unsalted butter
  • 2 tbsps fresh lemon juice (optional)
  • 1/2 tsp vanilla extract
  • 1/2 c fruit jam (optional)
  • 1/2 c all-purpose flour

Directions
  • Step #1 Heat oven to 400° F.
  • Step #2 In a large bowl, whisk the eggs to mix.
  • Step #3 Add the flour & whisk until smooth.
  • Step #4 Add the milk, salt, & vanilla & mix until incorporated; set aside.
  • Step #5 Add the butter to a large cast-iron skillet & transfer to oven until the butter melts.
  • Step #6 Remove from oven & quickly pour the batter into the hot skillet.
  • Step #7 Return to oven & bake this until the pancake is puffed & golden, about 15 mins.
  • Step #8 Drizzle the lemon juice (if using) over the pancake.
  • Step #9 Spread the jam (if using) evenly over the top.
  • Step #10 Sprinkle top with the confectioners? sugar.
